FDA May Make Egg-Handling an Inside Story

To prevent illness from bacteria, keep eggs refrigerated, cook eggs until yolks are firm, and cook foods containing eggs thoroughly.
The U.S.
Food and Drug Administration proposed amending its food labeling
rules to allow egg producers to put a safe-handling statement inside egg cartons.
Currently, the safe-handling message must appear on the outside of cartons of eggs.
The FDA said it proposed changing the rule at the request of the egg industry and allowed 75 days for public comment.
The proposal would allow the safety message to appear on the inside of cartons that state the eggs inside must be refrigerated and
contain eggs still in the shell that have not been treated to destroy Salmonella bacteria.
Inside or outside, the warning would remain the same: To prevent illness from bacteria, keep eggs refrigerated,
cook eggs until yolks are firm, and cook foods containing eggs thoroughly.
